Cauliflower Rice Porridge

I’m going to try and keep these blog posts more consistent now I’m back at uni! As summer is just around the corner, my diet is pretty much 99% clean & I plan to keep it like that for my holiday to Thailand! 🙏🏼🐬👙

This recipe is great for those wanting the same porridge taste and fullness, but with less of the calories and carbs!  

INGREDIENTS 🌴

  • 150g cauliflower rice 
  • 150ml almond milk (not tinned one)
  • 1 egg white
  • 2 tsp cinnamon 
  • Stevia
  • Frozen berries
  • 1 tsp honey
  • 1 banana, mashed
  • 1 scoop protein powder ( I used pea protein from Pulsin

DIRECTIONS

  1. Mix together the cauliflower rice, mashed banana, egg white and almond milk and microwave for 2-3 minutes
  2. Once fully cooked, mix in the protein powder and stevia
  3. Top with berries, honey, cinnamon and whatever else! I sometimes add Greek yoghurt and pear
  4. Enjoy ✌🏼️🌙

  • 390 calories 
  • 35g carbs
  • 11g fat
  • 30g protein
