The Fluffiest Coconut Flour Pancakes

Aloha beautiful people of the interweb,

After months of making protein pancakes full of oats and protein powder, I’ve decided to have a go at something a little more coconutty. They make the perfecto healthy breakfast, as well as being gluten free and fitting for paleo diets!

I have to admit, it took me a while to actually get the recipe right. It was a flop at the start, but now it’s flippin’ delish. Pardon the pun. Or don’t. Anywhooooo… here’s the recipe just for you!




Serves: 1

Prep time: 10/15 minutes

250 calories, 20g carbohydrate, 12g protein and 10g fat



  • 3 tbsp coconut flour
  • 1 pinch baking soda
  • 1/2 tsp sea salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp coconut oil



  1. Preheat your pan on a medium heat. In a small bowl beat together the egg, vanilla extract and almond milk
  2. In a medium bowl, combine together coconut flour, baking soda, salt and whisk together. Stir the wet mixture into the dry!
  3. Grease your pan with the coconut oil and begin to ladle a few tablespoons into the pan. I always make smaller pancakes as they’re so much easier to control! Make sure to cook for a few minutes on each side, until browned and dry.
  4. GET IN THEREEEEEE – Throw on some fruit, honey – whatever you fancy! And tuck into your pancakes!
